Cranberry-Coconut Chutney

Cranberry –Coconut Chutney





Ingredients: 

1.       whole Cranberries  ½  cup
2.       Salt                           1 TSP
3.       Coconut                   ¼  cup (I Used Frozen)
4.       Coriander Leaves    a bunch

Tampering: 

1.       Green Chilies            8 (Adjust to taste)
2.       Salt                            1 TSP
3.       Coconut                      ¼  cup (I Used Frozen or Fresh )
4.       Urad dal                     1 /4  TSP
5.       Turmeric powder       ¼ TSP
6.       Curry leaves              A Bunch
7.       Coriander leaves        1 TBS
8.       Methi  Seeds              ¼ TSP
9.       Mustard seeds            ¼  TSP
10.   Cumin  seeds              ½ TSP
11.   Oil                              2 TBS
12.   HIng                           1/4 TSP
13.   Garlic                         2   pieces
14.   Ginger                         ¼   tsp


Method 

1.      Heat oil in a pan , once oil is hot enough add  Urad dal ,green chilies, curry leaves, methi  seeds ,Mustard seeds, Turmeric Powder, cumin Seeds, garlic , ginger pieces and Hing,and keep them in a separate bowl
2.      Add cranberries and coconut to the above Oil.
3.       Once the Cranberries are soft add everything along with the coriander leaves into a mixer   along with salt and make a smooth paste

4.       Tangy and spicy chutney is ready. This tastes well with any rice dish 








Kandi Podi

Kandi Podi  (Toor dal powder) :


Ingredients:

1.       Toor Dal       1  cup
2.       Moong dal     1/4 cup
3.       Red Chilies    10
4.       Cumin seeds  2 TBS
5.       Salt               2 tbs (adjust to taste)

Method:


1.       Dry roast all the above ingredients until they emanates a nice aroma
2.       Add all the roasted ingredients into a mixer add salt and make a smooth powder.
3.       The powder will be fresh for up-to 6 months if stored in an air tight jar

4.       Tastes very good with steamed white rice and Ghee or with curd.

Sambar Powder

Sambar powder


Ingredients:


1.       Toor Dal             1 CUP
2.       Chena dal            ½   CUP
3.       Urad dal              1/3 cup
4.       Coriander seeds   1/4   Cup
5.       Black Pepper       1  TBS
6.       Cumin    seeds     2 TBS
7.       Red Chilies          10 (Adjust to Taste)
8.       Cinnamon            2  1”pieces
9.       Cloves                 1  TBS
10.     Anise                  2 pieces
11.     Salt                    1 ½ TBS                                                                                                                                                               

Method

1.       Heat a pan and dry roast each ingredient above one by one until they produce a nice aroma
2.       Grind into a smooth powder


Cabbage Rice

Cabbage Rice:

Ingredients:

1        Cabbage                      ½  kg  (I used Cole Slaw mix)
2        Urad dal                     1 TBS
3        Cumin seeds               1 TBS
4        Mustard  seeds            1 TSP
5        Curry leaves                6  leaves
6        Green Chilies               6
7        Cashew Nuts               Fistfull
8        Garlic                         ½  TBS paste
9        Ginger                         1 TSP paste
10     oil                                6 TBS
11     Garam Masala Powder  1 TBS
12     Salt                              1TSP
13     Turmeric                      ½ TSP
14     Buna Chan powder        3 TBS  (Putnalu/Roasted Gram Dal)
15     Coriander  powder         1/2  TBS
16     Milk                             3 TBS
17     Curd                             1 TBS
18     Rice                              1 ½  CUP


Method

1         Cook Rice in a cooker
2         Add oil to a pan, once the oil is hot enough add ingredients from steps 2, 3,4,5,6
3         After they are fried well add Cabbage and Carrots and cook them
4         Add salt, Turmeric powder, Garam Masala powder, coriander powder, Ginger-Garlic Paste             and cook till they are all mixed.
5         Add milk, curd and Buna Chana powder and mix it properly after 10 minutes add             coriander and switch off the stove.
 6       Add prepared rice to the pan, add salt and mix well.
7         Serve with Curd and Chips

Ridge Gourd Chutney

Ridge Gourd Chutney

Ingredients:

Ridge Gourd 3

Tamarind   paste 1/2 TSP  or Tamarind 1/2 lemon sized ball., 
Green  chilies   7   (Adjust to taste)
Salt 1 TSP (Adjust to taste)
Garlic 2 Cloves 
Daniya Powder 1TSP
Coriander 1/2 bunch
oil 1 TSP

Tampering:
Oil TBS
Mustard Seeds 1/2 TSP
Cumin Seeds 1/2 TSP
Turmeric Powder 1/4 TSP
Urad Dal 1/2 TSP
Curry Leaves 1 stem
Hing 1/4th TSP


Method:

  1. Cut Ridge Gourd into small Pieces 
  2. Take oil in a pan,once the oil is hot enough add mustard seeds let them sputter then add Cumin Seeds, Urad Dal, Green chilly pieces, Hing, Garlic cloves,Curry leaves, dhania powder and coriander leaves
  3. Once everything is fried remove them from flame and keep them in a separate bowl
  4.  Take One TSP oil in the same pan once the oil is hot add Cut Ridge Gourd pieces and  Salt and mix well
  5. make sure the ridge gourd is boiled (approx 15 min).
  6.  add everything from step 2 and 5 to a mixer and make into a smooth paste
  7. and voila..tasty chutney is ready.

Tomato Pickle

Tomato Pickle


I learnt this pickle from my Granny..its easy and tastes amazing

Ingredients:

Tomato  1kg ,
Tamarind  1/4 kg, 
Red chilly powder 1/4 kg (Adjust to taste)
Salt 1/4 kg (Adjust to taste)
Garlic 100 gm
Turmeric  powder 25 gm
Fried Mustard seeds Powder 100 gm
Fried fenugreek powder 25gm

For Tampering:
Oil  1/4th kg
Mustard Seeds 1 TSP
Urad Dal 1 TBS
Hing 1/4th TSP
Dry red chilly pieces-6 pcs
Garlic Cloves -3-4

Method:

  1. Cut tomatoes into four pieces- mix tamarind, salt and turmeric powder with the pieces and marinate them for 1 day.
  2.  Squeeze out all the juice and separate tomatoes from the mixture and dry them in sun for 2 days.
  3. Mix the Juice with Dried Tomato Pieces,Red Chilly Powder, Fried Mustard  Seeds Powder,Fried Fenugeek powder and Garlic  
  4. Take all the oil in a pan,once the oil is hot enough add mustard seeds let them sputter then add Urad Dal, Red chilly pieces, Hing and Garlic cloves.
  5. Mix this oil with the pre mixed pieces and powder
  6. Eat it with hot rice and appadam..YUmmmmmm
Note: -If living in not so sunshine plenty area you can substitute with sun-dried tomatoes and squeezed tamarind juice mixed with salt and turmeric powder.
