­­­­­­­­Ingredient



1.   Spinach leaves          1 cup
2 .  Onion pieces             1 cup
3.   Cumin powder           1  tsp
4.   Coriander powder      1 tsp
5.   Garlic cloves              4    
6.   Ginger                        2 inches
7.   Tomato                      1  
8.   Cinnamon piece        1/2 inch
9.   Anise                         2 pieces
10.   Pannier                    ½ cup
11.   Green chillies           3
12.   Sugar                       1 tsp
13.   Salt                           1  tsp
14.   Oil                             1 tsp
15.   Cashew nuts            4
16.   Lemon juice             1 tsp
17.   Water                       2 Cups

Method

 1.   Dry roast and ground Cinnamon, anise and cashews to a nice powder
2.   Add onion, green chillies and ginger to grinder and grind them into   smooth paste
3.   Boil 1 cup of water and add tomatoes and cook till they are tender
4.   Remove the skin from the tomato and smash it into a nice paste
5.   Add oil to pan, once hot enough add onion, green chillies and ginger paste   and fry them till they emanate a nice aroma-be sure not to burn it
6.   Add spinach paste, tomato paste and 1 cup water   mix it properly after 2 minutes add salt and roasted ground masala mix, cumin powder  and coriander powder
7.   Add sugar and paneer pieces to pan mix it properly after 3 minutes, add lemon juice to pan and mix it.
8.   Yummy tasty Palak paneer is ready
9.   P.S You can add heavy cream to the finished product to make it more appealing and tasty

Vangi bath


Ingredient


1.   Rice                           1 cup (cooked)
2.   Brinjal                       10 (cut into long pieces)  
3.   Cumin powder          1 tsp
4.   Coriander powder     1 tsp
5.   Green chillies            4 (long pieces)
6.   Ginger                       1 inch (paste)
7.   Garlic clove               4 (paste)
8.   Salt                            1 tsp
9.   Oil                              1 tbsp.
10.      Mustard    seeds   1 tsp
11.      Cumin  seeds        1 tsp   
12.      Turmeric powder  ½  tsp
13.      Coriander leaves   1 bunch
14.      Yogurt                    1 tsp
15.      Milk                        1 tsp   
16.      Sambar powder     1 tbs

   Method

1.   Add oil to pan once it is hot enough add cumin seeds, mustard seeds.
    2.   After they sputter add green chilli pieces and brinjal pieces      and fry until brinjal turns into nice lite brown color
3.   Add ginger and garlic paste, Turmeric powder and salt then mix it properly
4.   After 3 minutes add Yogurt and milk mix it then add coriander leaves and Sambar powder.
5.   Add rice t the pan and mix it till the rice is evenly
6.   Hot and Spicy Vangi Bath is ready

Corn soup


Ingredient
  
1.     Corn (Sweet)         1 cup (cooked)
2.   All-purpose Flour   1 tsp
3.   Carrot                      1 (cut into small pieces)
4.   Garlic clove            4
5.   Onion pieces          ½ cup
6.   Salt                          1 tsp
7.   Sugar                      1 tsp
8.   Butter                      1 tsp
9.   Cumin powder        1 tsp
10. Ginger paste           1 tsp
 
Method

 1.   Add oil to pan once hot enough add onion pieces constantly stir them   until onion pieces turn into brown color
2.   Then add carrot stir until carrot is cooked well add garlic clove stir it after 1 minute add salt, ginger paste and sugar stir it for 3 minutes
3.   Add butter after few seconds turn off the stove
4.   After the above mixture is slightly cooled add little water to grinder grind it into a puree along with corn. Yummy corn soup is ready

Bitter gourd (Kakarakaya) Curry

Ingredient
1.   Bitter gourd         2  (cut into round  pieces)
2.   Onions                    ½ (Small pieces)
3.   Cumin powder         1 tsp
4.   Coriander powder   1 tsp
5.   Rice flour                 1 tsp
6.   Oil                             1 tbsp.
7.   Curry  leaves           1 bunch
8.   Coriander leaves     1 bunch
9.   Garlic   clove            3 (paste)
10. Mustard seeds        ½ tsp
11. Turmeric powder    ½ tsp
12. Cumin seeds           ½ tsp
13. Sugar                        1 tsp
14. Tamarind paste        1 tbsp.
15. Salt                            1 tsp

Method

1.   Cook Bitter Gourd in water and salt.
2.   Add oil to a pan once it’s hot enough add cumin seeds and mustard seeds after they sputter add onion to pan and fry until onions turns transparent
3.   Then add drained bitter gourd pieces to pan mix it properly
4.   After 2 minutes add Tamarind paste salt, turmeric powder, garlic paste and let it simmer for a few minutes
5.   Add cumin powder, coriander powder, Sugar and curry leaves
6.   Then add rice flour to water and make sure there are no lumps and add this to the pan.
7.   Let it simmer before switching off the heat

Apple pista kheer

Ingredient

1.   Apple           1 cup (Shredded)
2.   Pista            ½ cup (roosted powder)
3.   Sugar           3 tbsp.
4.   Milk              1 cup
5.   Cardamom  ½ tsp

Method

 1.   add milk to pan after 3 minutes add apple ,
      pista powder stir  until milk is boiled and
       reduced to a semi thick liquid
2.  Then add sugar stir after 5 minutes add cardamom  powder
     and turn off the  heat
3.  Serve it chill or hot.

Brinjal salan (Eggplant)


Ingredient

1.   Brinjal                   10 (cut into long pieces)
2.   Onion pieces        1 cup
3.   Ginger                  1 inch
4.   Garlic clove          5
5.   Oil                        2 tbsp.
6.   Salt                      1 tsp   
7.   Turmeric powder 1 tsp
8.   Cumin seeds       1 tsp
9.   Coriander seeds  1 tsp 
10.Tomato                  one
11.Cashew nuts         10
12.Red chilly powder 1 tsp
13.Dry grapes            10
14.Sugar                    1 tsp 
15.Coriander leaves  1 bunch

Method

1.   Grind onion, cumin seeds, coriander seeds, ginger, garlic and cloves to a nice paste
2.    Add water pan once it is boiled add  tomato pan cooked it properly
3.   Then  skin is  remove from tomato then smash it like paste  
4.   Add oil to pan once hot enough add brinjal pieces fry until all pieces cooked properly  then keep it in a separate bowl
5.   In same pan add paste from step 1 and fry till there is no raw smell
6.   Add cooked brinjal, tomato paste, salt and turmeric powder to pan mix it properly
7.   after 3 minutes add cashews,  dry grapes, sugar, red chilli powder and  mix it properly
8.   right before turning off the heat add coriander leaves

Bread rolls

Ingredient

1.   Bread slices       6
     2.   Carrot                ½ cup(chopped)
     3.   Peas                  1/2 cup
     4.   Cauliflower         ½  cup
     5.   Onions               ½ CUP(chopped)
     6.   Potato                2 (small pieces)
     7.   Almond              10 (roasted powder)
     8.   Garlic clove        3 (paste)
     9.   Cumin powder    ½ tsp
    10.   salt                     1 tsp(adjust to taste)
    11.   Coriander powder  1 tsp
    12.   Cinnamon powder  1/2 tsp
    13.   Oil                           2 tbsp.
    14.   Milk                         1 tbsp.
    15.   Curd                       1 tbsp.
    16.   Coriander leaves    1 (A fistfull)
    17.   Butter                      1 tbsp.
    18.   Green chillies          4 (chopped)

 Method

 1.   Add oil to pan once hot enough add onion and fry till they turn translucent
2.   Add carrot, peas, cauliflower, Potato and green chillies mix till all vegetables are cooked properly
3.   Add salt, cumin powder, coriander powder, cinnamon powder, garlic paste and coriander leaves let it simmer
4.   Add milk ,curd and almond powder mix it properly
5.   Spread the curry onto the bread slices and roll them.
6.   Fry the rolled slices in a pan with a little butter.
